Janszoon
Deep chocolate, dense caramel and ripe cherry, with a gentle citrus acidity. Brazil sets the chocolate base, Colombia adds caramel and orange, and Rwanda gives structure through berry acidity. Served in Edinburgh cafés since 2007.
Trigonometry
Blueberry and raisin over milk chocolate and digestive ginger, with a sparkling acidity. Sidama natural and washed lots from Daye Bensa make up 80 percent, over a chocolatey Brazilian base.
Cobblestone
Caramel, strawberry and roasted almond, with a bright orange citrus acidity. La Virgen by the Villa Esperanza collective in Huila, Colombia, makes up 55% of the blend and El Porvenir a family farm in Jinotega, Nicaragua, makes up the rest
Janszoon and Trigonometry are medium dark roasts, made for espresso, moka pot, French Press. Cobblestone is a medium roast that works as well in a pour over as it does in an espresso machine.
All three suit milk.
