Magnum Sidra is a standout lot from La Palma y El Tucán, one of Colombia’s most forward-thinking farms. Located in Cundinamarca, just outside Bogotá, the farm has become a reference point in the world of specialty coffee - known for its dedication to rare varieties, precision processing, and sustainable practices.
What sets this particular coffee apart is its Sidra variety, a hybrid developed from Typica and Bourbon genetics. It thrives at high altitude and is prized for its delicate florals, layered sweetness, and clean cup profile. Under the right conditions — and with the right processing — Sidra can deliver extraordinary clarity and complexity.
At La Palma y El Tucán, the team works with great attention to every step of production. The farm is led by brothers Elias and Shady Roa, who have played a key role in shaping Colombia’s modern coffee identity. Their commitment to innovation is clear in this lot, which undergoes a Natural Mosto Anaerobic fermentation — a method that adds depth and expressiveness to the coffee, while retaining a structured and balanced profile.
After harvesting, ripe cherries are fermented in tanks with the addition of “mosto” — a fermented juice derived from earlier batches of coffee — creating a layered microbial environment. This adds aromatic intensity and enhances the coffee’s fruit-forward character. The cherries are then dried carefully to preserve clarity and prevent over-fermentation.
Magnum Sidra is lightly roasted to highlight these characteristics: expect notes of ripe banana, strawberry, grape, and red apple, alongside floral undertones and a vibrant blood orange acidity. As it cools, more exotic tropical fruit notes emerge, finishing with a silky sweetness that reflects the precision and care taken at every stage.
