Guatemala’s Antigua region coffee is best known for stylish washed process coffees full of balance, finesse and quality. The weather is cool and consistently dry in the harvest season due to a micro- climate created by the three vast volcanoes dominating the region’s horizon. This drier climate not only serves well for washed process coffees, it is also ideal for more fruit forward novel methods like honey and natural processes.
This honey process coffee from Finca Gascon demonstrates this perfectly. The harvest and process methods used by Filipe Contreras are very much a modern approach: fruit is harvested at optimal ripeness to maximise sugar levels, undergoes a pre-drying ferment for fruit-forward profiles, and is meticulously dried on raised beds to preserve quality.
The result in the cup is delicious. The finesse of all good Antigua coffee is retained, setting a foundation for vibrant, fruit-forward notes to flourish. Plush red berry, mandarin orange and dried fruit flavours roll over a muscovado sugar like base. There are hints of of tropical fruit, cardamom,
and honeysuckle as the coffee cools, complemented by a fresh, zesty orange acidity that provides structure. The mouthfeel is appealing and full, with a creamy and dense weight that elegantly brings all elements together.
