The high-altitude Chalatenango district of Alotepec-Metapán in El Salvador is known for producing some of the country's most exceptional, often award-winning coffees. We first met Jaime Guevara nine years ago because his farm, Finca Don Jaime, had won a prestigious local quality award. Since then, Jaime's coffee has consistently delivered a delicious and approachable cup, beautifully representing the classic profile of El Salvadorean coffee.


The farm is focused very much on quality and Jamie has continued to win awards for his coffee since we started working together. Embracing innovation, Jaime was one of the first adopters in the region of raised drying beds to meticulously control the drying process after fermentation. This move away from the traditional El Salvadorean concrete patio method has proven to be a quality game-changer. Building on this progress, we collaborated with Jaime to further refine his process by funding the construction of a shading system for these beds. This additional improvement ensures that the coffee is cured at lower temperatures, preserving its natural sweetness and further elevating its overall quality.


When used to dry whole coffee cherries for natural process micro-lots, the extended time on these beds enhances the positive fermentation at the beginning of the drying phase. This approach leads to a vibrant, fruit-forward expression of the Pacas variety at its finest. The result is a coffee that showcases the best attributes of both the terroir and the processing method.

In the cup, this coffee presents a plush, ripe structure that leads to exotic flavours of red berry, plum, and banana. A sugar cane sweetness and syrupy mouthfeel are complemented by hints of almonds and milk chocolate. The experience is balanced by a refreshing, zesty lemon citrus finish, creating a complex high quality flavour profile that characterises so well what makes Jaime's coffee so special.
