Thailand first started growing Arabica coffee in the highlands of the north during the 1970s.  Starting first as a scheme to reduce opium production promoted by King Bhumibol Adulyadej, production has grown and evolved over the years.  Today there is a thriving countrywide specialty coffee scene exemplified perfectly by Sirinya Coffee.


Sirinya Coffee is a family-owned farm and roastery in Chiang Rai.  Owners Oil and Goh Chaosuwanwilai started in 1999 on a small plot of land and have always aimed to combine their commitment to organic and sustainable practices with innovative, high quality

processing methods.  Oil and Goh take care and attention in their processing of specialty Arabica to extraordinary levels.  After floating and meticulously hand sorting their harvest the cherries are mixed with local yeasts, enhancing the coffee's complexity and fruit-forward flavour profile, before undergoing controlled anaerobic fermentation.  Once the fermentation pH level hits target the coffee is depulped and ready for a two-stage curing method.  The first is outside drying on racks, and the second is a slow, temperature-controlled phase to retain the coffee's nuanced flavours


A bright and vibrant grapefruit acidity shines in this light roast, supported by fresh flavours of white grape and greengage.  There is a full caramel sweetness, while warm brown spice adds depth and complexity. Hawthorn florals offer subtle aromatics, balanced by a gentle tannic structure. A subtle, rounded creamy texture carries these flavours, creating a refined and elegant finish.
